If any of you out in the dear blogging world haven't noticed, I have been MIA lately as work and seeing clients is sucking the life out of me! I get home so late every night, but every night my sweet hubby always waits to eat dinner with me. For those of you who don't know Hunt, he has been on a food schedule since he came out of the womb. You can bet your bottom dollar that he is eating breakfast around 8:00, eating lunch right on the money at 12:00, and dinner at 7:00. BUT, every since he has married me, who has been completely off schedule ever since I have been born, it has been fun trying to find a compromise on eating times. All that to say, where we are in our lives at the moment, no matter how hard I try, I almost never get home before 8:00. Sometimes I will get lucky, but most of the time it's straight in the door and getting ready for dinner because Hunt is sooo starving by that point. I'm not gonna lie, Hamburger Helper has almost entered the weekly menu, because of how fast and inexpensive it is to make. But some bone in my newly wed body is saying that I can't do that because I am still in the phase (I think) of surprising hubs with all that is in my repertoire (it's dwindling though).
But, I have found the GOLDEN TICKET. I have not been able to find very many Crock-Pot recipes, but this one is a gem.
All it takes is:
1 pack of boneless skinless chicken breasts
1 package of taco seasoning
1 jar of salsa.
That's. It. Throw it all in the Crock-Pot and Voila! Yummy Salsa Chicken that you can eat again later in the week as tacos, mexican lasagna, or a taco salad!

ReplyDeleteI made this last week and it was amazing! Next time, I am going to add a can of black beans, corn and a chopped onion though to spice it up and add some "sides."
